I've just been reading about storing potatoes (and carrots, beetroot,  
turnips, horseradish, etc.) in a Rodale's Organic gardening magazine,  
circa 1980.  The article recommends first sundrying them, then  
storing in a cool, dry place for a few weeks to cure.  Then place in  
a sealed container (a few small air leaks are OK) with a few apples.

With this setup, the oxygen is consumed by the vegetables (preventing  
moulds & rot), and ethylene is given off by the apples, inhibiting  
the sprouting of the potatoes.
