Greetings 

Unusually for me I cant locate this info to reconfirm.....but here goes from
memory...

Ecuadoreans store potatoes on the window sill in the freezing cold. The
potatoes freeze overnight and then thaw, shedding water, during the day.

I think I recall them turning black as a result of this process, in addition
to drying out by constantly shedding the water of the potato.

I wonder if this technique could be adapted for other vegetables?

Given global warming and the decline of 'real' winters [not to be confused
with nuclear winters...] this possible scenario seems to be the stuff of
fantasy.

I would be happier having a horticulturalist weighing in to this discussion
before proceeding [given the toxicity of potatoes when stored in light
conditions-as evidenced by the green colouring...]
