Ruth,

 if you have some water available, you could get freshly cut 1m oak logs, 10
- 15cm dia., paint the ends to reduce drying out, and innoculate them in
late winter with infected wooden plugs of *Lentinula edodes *spores.  Keep
these watered over summer, in a cool shady space.  In mid-autumn soak for 24
hrs to stimulate fruiting, then stand the logs vertically.  Shiitake
mushrooms should begin to appear about 1 week after this.

You could ask Passu, parsuram at ceres.org.au , if he can help you with access
to the spores.
