Hi Dan - welcome!

regarding bamboo - did you see that Rio are now making undies from 
bamboo? I have felt bamboo fabric, and it is very nice! Hopefully the 
bamboo in this instance is being, grown and processed sustainably.... :-)

regarding not having land - don't forget you can grow a lot of stuff in 
pots - lots of things like herbs, lettuce, tomatoes - even dwarf fruit 
trees, lend themselves will to being grown in pots. I have a dwarf peach 
and a ballerina apple in pots, and they have been happy for a year or so 
and the peach tree bore fruit for the first time last year... I have 
also successfully grown carrots in old bathtubs, along with lettuce, 
parsley, chicory, and more. The pumpkins in the bathtubs grew well but 
didn't fruit so well - this might have been a water issue as much as 
anything... you could still give it a try! Best thing about growing in 
pots is you can take it with you when you move... There is a lot of info 
out there on container gardening...

re composting... you might find it easier to have a worm farm for the 
moment. I've had one for years - it is the kind you buy (although lots 
of people make their own), and I like it because it is raised on legs so 
that you can put a bucket under it for drainage (and very good worm 
liquid plant tonic!), and it is completely closed and inaccessible to 
rats, unlike a lot of ordinary backyard compost bins. I find mine very 
low maintenance - just add food scraps and sometimes old newspaper or 
packaging, when I have it, and I have had no problems and a continuous 
supply of the best plant food, for hardly any effort.

I probably won't see you at the Convergence as I can only be there on 
Day 1, but I wish you well in your permaculture doings, and look forward 
to getting to know you and hear about what you're up to, through the list!
